It’s been a while hasn’t it? I’ve been busy with Christmas, but don’t fret because I have been recording all along. I’m going to take a time skip for this entry. I was taken to Vegas by my Dad and Stepmom as my Christmas gift. I cannot thank them even remotely enough for what I was treated to, without a doubt the greatest meal of my life.

The Fleur De Lis is by far the epitome of what a good restaurant should be. The service, the atmosphere, the tableware and most importantly the food were unparalleled. The greatest dining experience of my life.

The silverware was spotless, not even a smudge. It was changed after every course with the utmost precision. The glasses had sharp edges, really thin edges and I liked that for some reason. My water was filled about 8 times and that usually never happens. The service was constant without being over my shoulder. I was in heaven.


First we started off with a choice of breads, all served hot. I opted for the pretzel roll, and I wasn’t disappointed. It had the perfect amount of salt on it. This wasn’t your everyday pretzel, this was pretzle-fection. It was toasted and crunchy on the exterior and soft and moist on the interior. I also got to taste some onion focaccia bread. It was my stepmother and she graciously shared it with me. Even though I got the bottom half I could taste that the onion was melted into the bread. It had lovely nooks and crannies for the butter to melt in. This wasn’t even a course and I was in heaven. I couldn’t even imagine what could come next.

The
amuse bouche was goat cheese served with beat and beat puree. The tartness of the cheese was countered by the sweetness of the beat. The sauces all different, but not by much were pretty good too. I liked the dark red one best it had the deepest flavor of them all. I liked this dish it was a great start.

We were then served tuna tartar on a bed of julienned fennel and micro greens paired with a ponzu sauce and sesame cracker. The tuna just melted in the mouth it was fatty and amazing, my god.... The fennel was prominent but didn’t overpower, same could be said about the greens. The tartness and saltiness of the ponzu brought the dish to another layer of flavor. The cracker was surprisingly sweet and knocked the kick of the ponzu off of my tongue. Excellent.

The next dish was a truffle onion soup served with julienned truffle, a red wine red onion

reduction and a duck ragu inside of a wonton skin. The soup itself was poured into my bowl. This soup was creamy and rich I couldn’t get enough. It was my first time having truffle and I wasn’t disappointed. Very woodsy but gave the soup more flavors. Same could be said about the red wine reduction. The acidity cut through the creaminess and richness I loved that addition. It was my first time even tasting duck as well and even though it wasn’t actual duck I liked the flavor. It was nice to have alongside the soup. Fantastic!

Next we had veal ravioli in a veal stock reduction with sweet pea foam. The veal was great and the reduction very heavy. I would have liked this dish even more if there wasn’t any pea foam. Not being a pea or foam fan it hindered the dish. I liked it but the foam got in the way of me loving it.

Butter poached lobster with paprika foam on top of herb spaetzle and shiitake mushrooms. My first taste of lobster and I was spoiled. Each piece tasted very different but at the same time retained the richness and fattiness of the lobster. It’s not something I could eat a ton of but never the less it was delicious. This foam didn’t bother me as much and gave the lobster some heat. The spaetzle were chewy and well plain, but in a good way. Compared to the lobster it was a break for my taste buds, the shiitake giving just little bits of flavor with the spaetzle. I was in heaven.

The main course, venison with huckleberry reduction with potato puree. This was another first, first venison ever. I liked it can’t really describe it but it was tender and juicy. According to the old man it was a bit overcooked but I wouldn’t have known the difference. The huckleberries gave sweetness to the dish and I liked it with the venison. The potatoes were silky and buttery little crispy bits surprised me. Amazing, but I'm getting full.

The intermezzo (pre dessert dessert) was a passion fruit and coconut sorbet served with tapioca pearls, coconut milk and some fruit. Now I didn’t have any room in my stomach to spare and this dish was the only one I wasn’t crazy about. I’m sure it would of been fantastic to any fruit/coconut fan but not for me. Even so the one bite I had was rather good.

DESERT, MY GOD. A peanut butter milkshake, a molten chocolate cake with a chewy banana center and some baileys ice cream with a chocolate crisp. This was decedent to say the least. The milkshake was more of a peanut flavor than a peanut butter, but it was thick and creamy. The cake, well it was molten chocolate that’s all I have to say. The ice cream paired with the cake quite nicely and the crisp was just nice to have.
